Healthier Recipes: Tuna Cakes

I've decided to join the fun and post some of my families favorite recipes. Recipes I will be posting are healthier ones that are great for the whole family. I love trying new recipes, but some are just way out of my league. You know the recipes that call for a ton of ingredients! I really can't stand making recipes that call for A. ingredients that I've never even heard of, B. ingredients that are hard to find at the store, or C. ingredients that are super expensive. My family lives on a budget, and while some recipes looks good, sometimes we just can't afford them or have the time to make them. That is why my recipes will be simple, quick, and healthy choices!
 
Tuna Cakes

Most of my healthier recipes come from several of my favorite websites including Kraft foods and Jennie-O. This is a recipe I first tried out a couple months ago and we love it! It may sound bit different, but the flavor of the tuna and the stuffing complement each other and it’s so delicious! My husband does not like any type of fish, but he loves when I make these tuna cakes.

What you need:

2 cans of tuna in water, drained

1 box of chicken stuffing (any brand will do. I’ve use the cheaper store bought brand and it was just as good and saves $)

1 ¼ cups of Kraft four cheese (any kind of cheese will do. We use the bulk size cheese sold at Sams. Another great way to save $)

3/4 cup water

1/3 cup light mayo (saves on calories)

1/4 cup onion (we love to cook with onion so I add some in our recipe)

Carrots (I usually shred a few baby carrots. Use more or less according to personal liking)

2-3 tbsp of sweet relish 

How to make it:

Step 1
Mix all the ingredients in a large bowl


Step 2
Refrigerate for 10-20 mins. This will help the stuffing moisten and stick together better for the next step

Step 3
Spray non stick cooking spray on a large pan and heat on medium heat. Use an ice cream scoop to make balls of refrigerated mixture. To be honest, it’s easier to just grab a hand full with your hands and form the patties. Add to warm skillet.

Step 4
Flatten the patties with the spatula. Cook each side until it is golden brown, about 3 mins each side. 


Step 5
Serve and enjoy J


Side dish ideas:
We usually make sweet potato fries, which we love! Other great side dishes include salad, corn, or any of your favorite vegetables.
